Lemon Tarragon Salad on Whole Wheat
Lemon Tarragon Tuna Salad:
- ½ cup light mayonnaise
- 2 teaspoons lemon juice
- 1 ½ teaspoons chopped fresh tarragon leaves
- 1/8 teaspoon ground black pepper
- ¾ teaspoon chopped fresh Italian parsley
- ¼ cup diced celery
- 1 ½ Tablespoons diced red bell peppers
- 2 cans of water packed chunk light tuna, drained and broken into large chunks
Lemon Tarragon Tuna Salad on Whole Wheat:
- Water to cover sliced apples
- 1 Tablespoon lemon juice
- 1 large red delicious apple, thinly sliced into 32 pieces
- 1 Tablespoon and 1 teaspoon nonfat plain yogurt
- 4 (4-inch) 100% whole wheat hamburger buns
- 1 1/3 cups spring lettuce mix
- 8 slices tomato
Lemon Tarragon Tuna Salad:
- 1. 1.In a bowl, combine mayonnaise, lemon juice, tarragon, black pepper and parsley until well-blended for tarragon mayonnaise. Cover and refrigerate until ready to use.
- 2. 2.Combine celery, red pepper and tarragon mayonnaise.
- 3. 3.Gently fold in tuna until well combined.
NOTE: Be careful not to over-mix. Salad should remain slightly chunky.
Lemon Tarragon Tuna Salad on Whole Wheat:
- 1. In a bowl, combine water and lemon juice. Add apple slices to lemon water to keep from browning. Drain and pat dry when ready to use.
- 2. Spread 1 tsp yogurt on heel of each roll.
- 3. Place 8 slices of apple to evenly cover yogurt.
- 4. Evenly spread 1/3 cup tuna salad over apples.
- 5. Top tuna salad with 1/3 cup spring mix.
- 6. Place 2 slices tomato over spring mix. Place crown of roll on sandwich to close. Slice in half diagonally. Enjoy immediately!
