Sweet Potato Whole-Wheat Waffle
- 4 Sweet Potato Waffles
- 2 large bananas, sliced
- 1 cup blueberries
- 1/2 cup toasted pecan pieces
- 1/2 cup Whipped Yogurt Creme
- 1. Place one waffle on each plate. Arrange half a sliced banana and 1/4 cup of blueberries over each waffle.
- 2. Top the waffle with 2 tablespoons of Whipped Yogurt Crème and 2 tablespoons of toasted pecans. Enjoy immediately!
Sweet Potato Waffles (makes 8 waffles)
- 2 cups water
- 1 1/3 cup buttermilk pancake mix
- 1 cup whole wheat flour
- 1 large egg or 1/4 cup liquid eggs
- 1/2 teaspoon ground cinnamon
- 2/3 cup baked, cooled, and mashed sweet potato, about 1 medium sweet potato
- 1. Whisk all ingredients in a large mixing bowl until well combined.
- 2. Heat a 6- to 7-inch waffle maker per the manufacturer’s instructions.
- 3. Coat the waffle maker with nonstick pan spray.
- 4. Evenly ladle 1/2 cup of batter over the hot waffle maker. Close the lid and cook per the manufacturer's instructions, usually 3 to 6 minutes total cooking time. The waffle should easily come off the waffle maker. Keep warm until ready to eat. Leftover waffles can be cooled quickly and reheated the next day.
Whipped Yogurt Crème (makes 1 cup)
- 1/4 cup heavy whipping cream
- 1/2 cup nonfat plain Greek yogurt
- 1/2 teaspoon honey
- 1/8 teaspoon ground cinnamon
- 1. In a chilled bowl, whip the cream with a whisk until stiff peaks are formed.
- 2. Blend together the yogurt, honey, and cinnamon until smooth.
- 3. Gently fold the whipped cream into the yogurt until just combined. Keep chilled until ready to use.

- Whipped yogurt crème is delicious on fresh fruit or cinnamon-roasted sweet potatoes.
- Try partially cooking the sweet potatoes in the microwave for 3 to 4 minutes for a faster cooking time.
