Fresh Fruit Cobb Salad

Fresh Fruit Cobb Salad
- 8 ounces (about 10 cups) spring mix
 - 3/4 cup toasted pepitas or pumpkin seeds
 - 1 cup quartered strawberries (about 4 to 6 large strawberries)
 - 1 cup drained mandarin orange segments
 - 1 cup pineapple, cut into 1/2-inch pieces
 - 1 large ripe avocado, cut into 1/2-inch pieces and tossed with lemon or lime juice
 - 1 cup blueberries
 - 1 cup red grapes, cut in half
 - 3/4 cup Creamy Poppyseed Dressing
 
- 1. Place 2 1/2 cups of spring mix into each bowl and top it with 3 tablespoons of toasted pepitas.
 -   2. Evenly distribute the fruit in rows over the pepitas in the following order: 
- 1/4 cup strawberries
- 1/4 cup oranges
- 1/4 cup pineapple
- 1/4 cup avocado
- 1/4 cup blueberries
- 1/4 cup grapes. - 3. Enjoy immediately with 3 tablespoons Creamy Poppyseed Dressing!
 
Creamy Poppyseed Dressing
- 1 orange, zested and juiced
 - 1/4 cup light mayonnaise
 - 1/4 cup light sour cream
 - 1 tablespoon honey
 - 1/2 teaspoon poppy seeds
 
- 1. Whisk all ingredients together in a small bowl until well combined. Cover and keep refrigerated until ready to use.
 
Chef Tips:
- You can make the dressing in a larger batch and keep it covered in the refrigerator for up to 3 days.
 - If you cannot find fresh fruit, frozen fruit can work if it is thawed overnight and patted dry.
