Mango Lassi Parfait
- 3 cups nonfat plain Greek yogurt
- 1 teaspoon of ground cardamom
- 3/4 cup Mango Chia Compote
- 1 cup mango, cut into 1/2-inch pieces
- 1/4 cup pomegranate seeds
- 1 1/3 cups Coconut Almond Granola
- 1. In a small mixing bowl, combine the yogurt and cardamom until well-mixed.
- 2. Layer each of the following in order in clear 8-ounce glasses:
- 3 tablespoons Mango Chia Compote
- 3/4 cup cardamom yogurt
- 1/4 cup diced mango - 3. Sprinkle with 1 tablespoon pomegranate seeds.
- 4. Top with 1/3 cup granola and enjoy immediately!
Mango Chia Compote
- 1 tablespoon lemon juice
- 1/2 cup pureed mango
- 1/4 cup chia seeds
- 1/4 cup unsweetened canned pineapple juice
- 1. Mix all ingredients together in a small, non-reactive bowl. Cover and refrigerate overnight until the compote has thickened.
Coconut Almond Granola
- 1/2 teaspoon agave nectar or syrup of choice
- 1/2 teaspoon melted coconut oil
- 1/4 teaspoon vanilla extract
- 1/2 cup rolled oats
- 1 tablespoon unsweetened shredded coconut
- 1/4 cup sliced blanched almonds
- 1 tablespoon chia seeds
- 1/8 teaspoon kosher salt
- 1. Preheat the oven to 375 degrees Fahrenheit. Combine the agave, melted coconut oil, and vanilla extract in a large bowl until well mixed.
- 2. Add the oats, coconut, almonds, chia seeds, and salt.
- 3. Evenly spread the granola mixture in a thin layer onto a parchment-lined baking sheet. Bake for 15 to 18 minutes at 375 degrees Fahrenheit or until golden brown. Remove the granola from the oven and cool completely. Once it has cooled, crumble it into large clusters and store it in an airtight container.
