Farmhouse Omelet with Fresh Fruit
- 1/4 cup caramelized red onions
- 2 cups mixed fresh fruit (red grapes, honeydew, cantaloupe, and pineapple), sliced 1/2 inch
- 3/4 pound spicy black bean burger, diced 1/4 inch
- 1 cup fresh tomatoes, diced 1/4 inch
- 2 cups egg whites
- 2 cups fresh arugula
- 1/4 cup part skim mozzarella cheese, shredded
Caramelized Red Onions
- 1/3 cup red onions, sliced 1/8 inch
- 2 1/2 teaspoons balsamic vinegar
- 1/2 teaspoon light brown sugar
- 1/8 teaspoon fresh thyme leaves, chopped
- 1/8 teaspoon ground black pepper
- 1. Caramelized Red Onions: Spray sauté pan with vegetable oil. Add onions and cook on high heat for 5 minutes or until translucent. Add balsamic vinegar, brown sugar, thyme and pepper. Stir to combine. Reduce heat to low and cook until golden brown.
- 2. For Service: Spray griddle with vegetable oil. Place 1 tablespoon tomatoes, 1/2 tablespoon onions, and 1 1/2 tablespoon black bean burger pieces on griddle. Saute over medium heat for 3 to 5 minutes. Ladle 1/2 cup egg whites onto griddle. Cook until whites begin to firm. Place tomato and black bean mixture in center of egg white omelet. Top with 1/2 cup arugula and 1 tablespoon cheese. Fold in half to close. Serve with 1/2 cup fresh fruit.
