Funghi & Thyme Soup
- 200 g common mushroom
- 100 g chestnut mushroom
- 1 cube chicken stock
- 0.5 lt water
- 1 tbsp thyme
- 80 ml cooking cream
- 1/2 onion
- 1 tbsp olive oil
- 1 clove of garlic
- pinch of pepper
- 1. Prepare chicken stock
- 2. Chop the onion and press the garlic. Brush off the common mushrooms and cut them in slices. Heat the olive oil in a frying pan, bake the onion, add the garlic puree and 2/3 of the common mushrooms. Add chicken stock, cook shortly and puree the soup in a blender
- 3. Brush off the chestnut mushrooms cut them in slices.
- 4. Firmly slide the thyme leaves off the woody stem. Add cooking cream, chestnut mushrooms, thyme and the rest of the common mushrooms and shortly boil. Add pepper to your flavour
