Grilled chicken and tomato salsa sandwich
- 4 wholegrain buns
- 400 g chicken thighs
- 100 g guacamole (fresh)
- 2 roma tomatoes
- handful of coriander
- 1 red onion
- 1 tbsp lemon juice
- 1 tsp cajun spice mix
- 1 tbsp sunflower oil
- 1. Preheat the oven at 180 degrees
- 2. Mix the chicken thighs with the sunflower oil and cajun spices. Bake for about 15 minutes in the oven, let it cool down and cut in thin slices
- 3. Cut the tomatoes in cubes and finely chop the coriander. Cut the red onion in cubes. Mix the tomatoes, onion, coriander and lemon juice into a salsa and leave to marinate for at least 1 hour before use
- 4. Cut the buns and spread with the guacamole. Put on the chicken and spread the salsa on top
