A vegetable soup with lots of peas, onion, garlic and a fresh touch of mint.
Pea mint soup
- 0.5 l of vegetable stock
- Hand of mint
- 1 tsp sunflower oil
- 1 onion
- 1 clove of garlic
- 200 g peas
- Pinch of pepper
- 1. Chop the mint leaves and the onion.
- 2. Heat a pan with the sunflower oil and fry the chopped onion. Squeeze the garlic above the pan, add the mint and fry briefly.
- 3. Add the peas and deglaze with the vegetable stock. Let it boil briefly and mash the soup with the blender.
- 4. Divide the soup over the bowls and garnish with the black pepper.
