Trio of veggie sandwiches
- 12 mini waldkorn bread of 40 gr
- 200 gr fresh grilled vegetables
- 160 gr cherry tomatoes (mix)
- 1 avocado
- 60 gr mozzarella
- 40 g dairy spread
- 40 gr of hummus
- 1 tbsp harissa
- Handful of arugula
- Handful of basil
- 1 tbsp citrus vinaigrette
- 1 tbsp balsamic vinegar
- 1. Cut the avocado into thin slices, split the cherry tomatoes and finely chop the basil.
- 2. Mix the dressing with half of the cherry tomatoes and half of the chopped basil.
- 3. Cut open 4 of the mini waldkorn bread and spread them with the dairy spread. Divide the avocado and cherry tomato on top. Set the sandwiches aside.
- 4. Roughly chop the grilled vegetables.
- 5. Cut open 4 of the mini waldkorn bread and spread them with the hummus. Divide the grilled vegetables on top and garnish with the harissa. Set the sandwiches aside.
- 6. Cut the mozzarella into thin slices.
- 7. Cut open 4 of the mini waldkorn bread and cover with the arugula, the remaining cherry tomatoes and the mozzarella and drizzle with the balsamic vinegar and garnish with the remaining basil.
