Vegetable omelet
- 4 big slices of wholemeal bread
- 6 eggs
- 1/2 red onion
- 1/2 zucchini
- 1/2 bell pepper
- 50 g cherrytomato mix
- hand of chives
- hand of rocket salad
- 1 tbsp sunflower salad
- black pepper
- 1. Chop the chives into tiny pieces. Whip the eggs apart and add the chives and the black pepper.
- 2. Cut the red onion fine and the zucchini and bell pepper into small cubes. Halve the the cherrytomatoes.
- 3. Heat the pan with sunflower oil. Add the onion, bell pepper, zucchini and ½ cherrytomato. Pour the eggmix over the vegetables, fold the omelet double after 1 or 2 minutes. Serve the omelet on a slice of bread with rocket salad and the remaining cherrytomatoes.
