Loaded Cremini Breakfast Burrito
Cilantro Lime Yogurt Spread:
- ¼ cup nonfat plain Greek yogurt
- ¼ teaspoon True Lemon juice mix crystals
- 1/8 teaspoon peeled and finely chopped fresh garlic cloves
- 1/8 teaspoon kosher salt
- 1 pinch ground black pepper
- 1 ½ teaspoons lime juice
- ¾ teaspoon honey
- 1 1/8 teaspoon cilantro
Hash Brown Potato:
- 1 2/3 cups store-bought shredded hash browns
Creamy Scrambled Egg Whites:
- 1 cup egg whites
- 1/8 teaspoon Kosher salt
- ¼ cup nonfat plain Greek yogurt
Loaded Cremini Breakfast Burrito:
- 1 1/3 cups sliced cremini mushrooms
- 4 (10") whole grain flour tortilla
- ½ cup shredded cheddar cheese
- ¼ cup sliced roasted sweet red peppers
To Prepare Cilantro Lime Yogurt Spread:
- 1. In a mixing bowl, combine all ingredients until well-blended. Cover and place in refrigerator until ready to use.
To Prepare Hash Brown Potato:
- 1. Prepare potatoes according to directions on the package and cook until golden brown. Remove from heat.
To Prepare Creamy Scrambled Egg Whites:
- 1. In a mixing bowl, place egg whites and salt. Whisk until combined.
- 2. Coat a sauté pan with cooking oil spray. Place over low heat. Add egg whites. Cook and stir for about 2 minutes or until nearly cooked through.
- 3. Fold in yogurt with rubber spatula until creamy. Remove from heat.
To Prepare Loaded Cremini Breakfast Burrito:
- 1. Place sliced mushrooms in a single layer on a sheet pan. Do not overcrowd. Spray with cooking oil spray. Roast in a preheated 400-degree Fahrenheit convection (450-degree Fahrenheit standard) oven for 15 minutes or until lightly browned. Flip once halfway through cooking to promote even cooking.
- 2. As needed, warm tortillas in a sauté pan or in a microwave until pliable. Evenly spread with 1 Tablespoon cilantro lime yogurt Spread over each tortilla.
- 3. Place ingredients on bottom third of tortilla in the following order:
- 2 Tablespoons shredded Cheddar cheese
- 1/3 cup griddled hash browns
- 1/4 cup creamy scrambled egg whites
- 1 Tablespoon roasted red peppers
- 1 Tablespoon roasted cremini mushrooms. - 4. Roll tortilla to form a burrito. Slice in half on the diagonal and enjoy immediately!
