Lemon Tarragon Tuna Salad Sandwich

Lemon Tarragon Tuna Salad on Whole Wheat:
- 1 Tablespoon lemon juice (see Chef tip)
- 1 large red apple, thinly sliced into 32 pieces
- 4 teaspoons nonfat plain yogurt
- 4 (4-inch) 100% whole wheat hamburger buns
- 1 1/3 cups spring lettuce mix
- 8 slices tomato
- 1. Spread 1 teaspoon of yogurt on the heel of each roll.
- 2. Place 8 slices of apple on top to evenly cover the yogurt.
- 3. Evenly spread 1/3 cup tuna salad over the apples.
- 4. Top the tuna salad with 1/3 cup spring mix.
- 5. Place 2 slices of tomato over the spring mix. Place the crown of the roll on sandwich and slice them in half. Enjoy immediately!
Lemon Tarragon Tuna Salad:
- 1/2 cup light mayonnaise
- 2 teaspoons lemon juice
- 1 1/2 teaspoons chopped fresh tarragon leaves
- 1/8 teaspoon ground black pepper
- 3/4 teaspoon chopped fresh Italian parsley
- 1/4 cup diced celery
- 1 1/2 tablespoons diced red bell peppers
- 2 small cans (5 ounces drained weight total) of water packed chunk light tuna, drained and broken into large chunks
- 1. In a bowl, combine the mayonnaise, lemon juice, tarragon, black pepper and parsley until well-blended. Cover and refrigerate until ready to use.
- 2. Mix in the celery and red pepper and stir until well combined.
- 3. Gently fold in the tuna until it is evenly mixed.
NOTE: Be careful not to over-mix. The salad should be slightly chunky.
Chef Tips:
- Combine the lemon juice with water and place the sliced apples in the lemon water to prevent browning. Drain them and dry them well before using.
- If you cannot find fresh tarragon, use 1/2 teaspoon dried tarragon and let the mixture sit for an additional 10 minutes in the refrigerator for the flavor to develop.
