Mardi Gras Pizzetta
- 1/2 cup non-fat plain Greek yogurt
- 1 tablespoon lemon juice
- 4 (6-inch) whole grain flatbreads
- 6 tablespoons part-skim shredded mozzarella
- 3/4 cup thinly sliced yellow squash
- 1/4 cup thinly sliced baby spinach
- 6 ounces Sriracha BBQ Shrimp
- 1/4 cup thinly sliced red onion
- 1/4 cup thinly sliced red peppers
- 1/4 cup shredded carrots
- 4 teaspoons BBQ sauce
- 1. Preheat the oven to 400 degrees Fahrenheit.
- 2. Combine the Greek yogurt and lemon juice together to make a lemon yogurt sauce. Evenly spread 2 tablespoons lemon yogurt sauce to 1/4-inch from the edge of each flatbread and place them on an unlined baking sheet.
- 3. In order, evenly top each flatbread with:
-1 1/2 tablespoons part-skim shredded mozzarella
-3 tablespoons yellow squash
-1 tablespoon spinach
-1/4 cup sriracha BBQ shrimp
-1 tablespoon red onion
-1 tablespoon peppers
-1 tablespoon carrots
NOTE: Do not pile ingredients in the center; concentrate on spreading them towards the outside edges. - 4. Bake the pizzettas for 10 to 12 minutes at 400 degrees Fahrenheit or until the cheese melts. Remove them from the oven.
- 5. Evenly drizzle 1 teaspoon BBQ sauce over each cooked pizzetta.
- 6. Cut as desired. Enjoy immediately!
Sriracha BBQ Shrimp
- 1 tablespoon non-fat plain Greek yogurt
- 1/2 teaspoon BBQ sauce
- 1/8 teaspoon sriracha sauce
- 8 ounces small (71/90) peeled, deveined raw shrimp, thawed
- 1. In a bowl, combine the yogurt, BBQ sauce, and sriracha sauce until well-blended.
- 2. Add the shrimp to the mixture and toss to evenly coat. Cover, and place in refrigerator to marinate for 30 minutes.
- 3. Preheat the oven to 400 degrees or a skillet over medium high heat. If you are roasting the shrimp, place them on a parchment lined baking sheet in a single layer. Roast them for 5 to 7 minutes or until pink and opaque. If you are using a skillet, cook them in a thin layer for 3 to 4 minutes over medium high heat until they are pink and opaque. Remove the shrimp from the heat and cool them slightly before using.
Chef Tips:
- Make a larger batch of the Sriracha BBQ shrimp and keep them covered in the refrigerator for up to 2 days. They are delicious in salads or hot or cold grain bowls!
