Mardi Gras Pizzetta
Sriracha Bbq Shrimp
- 1 Tablespoon non-fat plain Greek yogurt
- ½ teaspoon original BBQ sauce
- Dash sriracha chili sauce
- 8 ounce peeled, deveined raw shrimp, thawed
Lemon Yogurt Spread
- ½ cup non-fat plain Greek yogurt
- 1 Tablespoon lemon juice
Mardi Gras Pizzetta
- 4 whole wheat flatbreads, approximately 4-inch x8-inch or whole grain pocketless Greek pita or whole grain naan
- 6 Tablespoons part-skim shredded mozzarella
- ¾ cup thinly sliced yellow squash
- ¼ cup thinly sliced baby spinach
- ¼ cup thinly sliced red onion
- ¼ cup thinly sliced red peppers
- ¼ cup shredded carrots
- 1 Tablespoon and 1 teaspoon original BBQ sauce
To Prepare Sriracha BBQ Shrimp:
- 1. In a bowl, combine yogurt, BBQ sauce, and sriracha chili sauce until well-blended. Cover, and place in refrigerator until ready to use
- 2. Add shrimp to the mixture and toss to evenly coat. Cover, and place in refrigerator to marinate for 30 minutes.
- 3. Place marinated shrimp on a parchment lined sheet tray in a single layer. Cook in a preheated 400-degree Fahrenheit oven for 3 to 4 minutes or until pink and opaque. Remove from heat, and cool slightly before using.
Note: Make sure not to overcrowd shrimp to prevent them from steaming.
To Prepare Lemon Yogurt Spread:
- 1. In a bowl, combine all ingredients until well-blended. Cover, and place in refrigerator until ready to use.
To Prepare Mardi Gras Pizzetta:
- 1. Preheat the convection oven to 350 degrees Fahrenheit (or standard range to 400 degrees Fahrenheit).
- 2. Evenly spread 2 Tablespoons lemon yogurt sauce to ¼-inch from the edge of each flatbread.
- 3. In order, evenly top with:
-1 ½ Tablespoons part-skim shredded mozzarella
-3 Tablespoons yellow squash
-1 Tablespoon spinach
-1/4 cup sriracha BBQ shrimp
-1 Tablespoon red onion
-1 Tablespoon peppers
-1 Tablespoon carrots.
NOTE: Do not pile ingredients in the center; concentrate on spreading them towards the outside edges. - 4. Place in preheated oven. Bake for 10 to 12 minutes or until the cheese melts. Remove from oven.
- 5. Evenly drizzle 1 teaspoon BBQ sauce cooked pizzetta and garnish with 1 Tablespoon chopped fresh cilantro.
- 6. Cut as desired. Enjoy immediately!
