Ripe Tomato & Spinach Pizza
- 10 ounces baby spinach
- 1 (16-inch) whole grain thin pizza crust
- ½ cup part-skim ricotta cheese
- ½ cup part-skim shredded mozzarella cheese
- ¼ cup shredded Parmesan cheese, divided
- 1 teaspoon chopped fresh parsley or ¼ teaspoon dried parsley
- 3 tablespoons Roasted Garlic Cloves
- 1 ½ cup diced tomatoes
- ½ cup fresh basil leaves, hand torn
- 1 teaspoon freshly cracked black pepper
- 1. Preheat the oven to 425 degrees Fahrenheit.
- 2. Heat a large skillet over medium heat. Add the spinach and a teaspoon of water and cook for 30 to 45 seconds until it has wilted. Alternatively, microwave the spinach in 15-second bursts with a tablespoon of water until it has just wilted. Remove the spinach from the heat, allow it to cool slightly, and coarsely chop it.
- 3. Mix the ricotta, mozzarella, 1 tablespoon of Parmesan cheese, and parsley until combined. Evenly spread the cheese mix to 1/4-inch from the edge of each crust.
- 4. Cover the cheese mixture with the wilted spinach to 1/2-inch from the edge of the crust.
- 5. In order, evenly top with:
- 3 tablespoons chopped roasted garlic
- 1 1/2 cups diced tomatoes
- 3 tablespoons shredded Parmesan cheese
NOTE: Do not pile ingredients in the center; concentrate on spreading them towards the outside edges. - 6. Place the pizza in the preheated oven. Bake for 10 to 12 minutes or until the crust is cooked to your liking. Remove from heat and cool for 1 to 2 minutes.
- 7. Evenly top with 1/2 cup of torn basil and 1 teaspoon of freshly cracked black pepper.
- 8. Cut into 8 even slices. Enjoy immediately!
Roasted Garlic Cloves
- 1/3 cup fresh garlic cloves
- 1. Place garlic cloves on sheet trays. Spray with cooking oil spray. Roast in a preheated 400-degree Fahrenheit oven for 10 to 15 minutes or until lightly golden. Remove from heat and allow to cool. Finely chop before using. If you are making the roasted garlic ahead of time, place it in a covered container in the refrigerator for up to 2 days.
Chef Tips:
- You may find peeled garlic cloves in the grocery store's produce section. Roasted garlic is delicious in mashed potatoes or parsnips. It also adds warmth to creamy yogurt-based sauces.
