- 2 cups diced roasted sweet potatoes
- 2 cups cooked barley
- 1 large gala apple, cut into 1/2-inch pieces
- 4 teaspoons canola oil
- 4 teaspoons dried sage
- 1/2 teaspoon ground allspice
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 4 large eggs
- 1/4 cup Skyr Style Yogurt Sauce
- 8 teaspoons Spicy Toasted Almonds
- 4 teaspoons chopped flat-leaf parsley
- 4 teaspoons thinly sliced green onions
- 1 lemon cut into 4 wedges
- 1. Combine the sweet potatoes, barley, apples, oil, sage, allspice, nutmeg, salt, and pepper in a mixing bowl and toss to combine.
- 2. Heat a sauté pan or griddle over medium heat. Cook the mixture for 5 to 7 minutes until the apples are soft but not mushy. Remove the barley mixture from the heat and keep warm until ready to use.
- 3. Heat the skillet again and coat with nonstick vegetable spray. When the pan is hot, cook the eggs to your liking.
- 4. Divide the barley mixture into four bowls and top each bowl with the following:
- 1 tablespoon yogurt sauce
- 1 fried egg
- 2 teaspoons spicy toasted almonds
- 1 teaspoon chopped parsley. - 5. Enjoy immediately with a lemon wedge!
Skyr Style Yogurt Sauce (makes 1/2 cup)
- 1/2 teaspoon very finely chopped garlic
- 1/2 cup nonfat plain Greek yogurt
- 1/4 teaspoon ground cumin
- 1/16 teaspoon cayenne pepper
- 1/4 teaspoon dried dill
- 1 tablespoon thinly sliced green onions
- 1/8 teaspoon kosher salt
- 1. Add all ingredients to a bowl and whisk until well mixed. Cover and keep refrigerated until ready to use.
Spicy Toasted Almonds (makes 1/2 cup)
- 1/2 cup sliced blanched almonds
- 1/4 teaspoon extra virgin olive oil
- 1/8 teaspoon cayenne
- 1/8 teaspoon paprika
- 1. Add all the ingredients to a bowl and toss to combine.
- 2. Place the almonds on a parchment-lined baking in a single layer.
- 3. Roast in a preheated 375-degree Fahrenheit oven until lightly browned, approximately 5 to 8 minutes, turning occasionally with a rubber spatula for even browning.
- 4. Allow the almonds to cool completely. Store in an airtight container for use.
Chef Tips:
- You can make spicy almonds in a larger batch and keep them in a sealed container at room temperature for up to 5 days.
- Consider using nonfat Icelandic yogurt (skyr) for the yogurt sauce if available. Greek yogurt is a close substitute.
