Tex Mex Chicken Pizza
Balsamic Chicken Breast
- 1/2 teaspoon balsamic vinegar
- 1/8 teaspoon peeled and finely chopped fresh garlic cloves
- 1/8 teaspoon Kosher or sea salt
- One pinch of ground black pepper
- 2 Tablespoons canola or extra virgin olive oil
- 12 ounces raw, boneless and skinless chicken breast, cut into 4 equal-size pieces
Pizza Sauce
- 1 cup no added salt diced tomatoes
- 1/4 teaspoon peeled and finely chopped fresh garlic cloves
- 1/8 teaspoon finely chopped fresh oregano or 1 pinch of dried oregano leaves
- 1/8 teaspoon onion powder
- 1 small basil leaf, thinly sliced or 1 pinch of dried basil leaves
- One pinch of ground black pepper
- One pinch of crushed red pepper flakes
Salsa Cruda
- 1 Tablespoon lime juice
- 1/2 cup diced tomatoes
- 2 Tablespoons diced red onions
- 2 Tablespoons seeded and finely chopped jalapeno peppers
- 2 Tablespoons finely chopped fresh cilantro
- 1 pinch of ground black pepper
- 2 Tablespoons frozen corn, thawed
Tex Mex Chicken Pizza
- 1-16-inch whole grain thin pizza crust
- 1 cup canned low-sodium black beans, rinsed and drained
- 3/4 cup part-skim shredded mozzarella cheese
- 1/4 cup shredded Cheddar cheese
- 1/4 cup chopped fresh cilantro
To Prepare Balsamic Chicken Breast
- 1. Combine the vinegar, garlic, salt, pepper, and oil. Whisk until well-blended for the marinade.
- 2. Pour marinade over the chicken in a shallow dish. Cover and place in refrigerator for 4 to 24 hours to marinate. Drain and discard excess marinade when ready to cook.
- 3. Preheat a grill or sauté pan. Coat with cooking oil spray. Place the marinated chicken and cook for 1 to 2 minutes on each side until well-marked.
- 4. Transfer to a sheet tray and roast in a preheated 375 degrees Fahrenheit oven for 5 minutes or until fully cooked. Allow cooling for 10 to 15 minutes before dicing. Cool slightly before using.
To Prepare Pizza Sauce
- 1. In a blender or food processor, pulse tomatoes lightly to crush. Transfer to a bowl.
- 2. Combine all ingredients until well-blended. Cover and place in the refrigerator until ready to use.
To Prepare Salsa Cruda
- 1. NOTE: Use gloves to seed peppers. Pepper juice can burn the eyes. Wash your hands thoroughly with soap and water after seeding the peppers.
Combine all ingredients. Mix well. Cover and place in the refrigerator until ready to use.
To Prepare Tex Mex Chicken Pizza
- 1. Preheat the oven to 425 degrees Fahrenheit or the heat recommended by the manufacturer.
- 2. Evenly spread 1 cup of sauce to 1/4-inch from the edge of the crust.
- 3. Cover sauce with 1 cup of black beans to 1/2-inch from the edge of the crust.
- 4. Evenly top with:
- 1 cup salsa cruda
- 8 ounces diced chicken
- 3/4 cup part-skim shredded mozzarella
- 1/4 cup shredded Cheddar cheese
NOTE: Do not pile ingredients in the center but concentrate on spreading them towards the outside edges. - 5. Place in preheated oven. Bake for 8 to 9 minutes. Remove from heat and cool for 1 to 2 minutes.
- 6. Evenly top with 1/4 cup of chopped cilantro.
- 7. Cut into 8 even slices. Enjoy immediately!
