Jerk Hake with Brown Rice & Mango Salsa
- 4 hake fillets (120g each)
- 80g brown rice
- 200g peas
- 1 mango
- 1 medium red chilli
- 60g red pepper
- 140g red onions
- 16g fresh coriander
- 1 lemon
For the jerk paste
- 20g fresh ginger
- 1 small green chilli
- 2 cloves garlic
- 5 teaspoons of dried thyme
- 1 lime
- 1 heaped teaspoon of all spice
- 2 tablespoons of water
- Salt & pepper for seasoning
- 1. Peel and grate ginger and garlic. Zest and juice the lime. Place all the Jerk ingredients in a blender until smooth, then coat the hake fillets in the paste and leave to marinate for about 1 hour.
- 2. While the fish is marinating. Peel and dice the mango. Deseed and finely chop red chilli, red onion and peppers, zest and juice lemon. Wash and finely shred the coriander and then mix together all the ingredients in a bowl.
- 3. Cook the brown rice and peas separately, drain and add the peas to the rice.
- 4. Pre-heat an oven to 180°C. Cook the hake in the oven for about 10–15 minutes or until the fish is cooked.
- 5. To serve; spoon the rice and peas on to a plate, top with the hake and spoon the mango salsa over the top.
