Korean Chicken Udon Noodles
- 400g of diced skinless chicken
- 400g of cooked udon noodles
- 1 red pepper sliced or diced
- 200g of broccoli florets
- 40g of finely sliced spring onions
- Large pinch of sesame seeds lightly toasted
- Large handful of fresh coriander roughly chopped
- 50ml of oyster sauce
- 25ml of light soy sauce
- 50g of honey
- 1 teaspoon of sesame oil
- 1 teaspoon of finely chopped garlic
- 1. Marinade the chicken with the oyster sauce, soy sauce, honey, garlic and sesame oil overnight or for at least 2 hours.
- 2. Heat a non-stick wok. Remove the chicken from the marinade and add to the wok. Cook until just cooked.
- 3. Add the broccoli florets, peppers and remaining marinade to the chicken and heat through.
- 4. Add the noodles and continue to heat through.
- 5. Once everything is hot, add the spring onions, coriander and sesame seeds.
- 6. Serve immediately.
